Our First recipe, because Marilyn made it tonight, is Swiss Chard Soup. Our neighbor and friend Missy shared her Mom’s recipe. Missy’s family eats vegetarian so we get a lot of good healthy recipes from her. And really, how cool is it that it’s Lent and we’re eating soup with lentils in it?😂
Marilyn’s modifications: Marilyn also added potatoes, homemade broth, and Mary Higgins’ seasoning salt. Mary is a friend from the NC mountains and we will be sharing the recipe for her seasoning salt soon.
I thought it would be fun to share the recipe the way we received it, thus the photo of the handwritten note below.

Swiss Chard Soup
11/2 cup Lentils, washed
7 cups Broth, (Marilyn makes her own)
3/4 cup onions, chopped
2Tb olive oil
1/2 cup lemon juice
1 bunch Swiss chard (Marilyn adds potatoes)
Boil lentils covered until tender, sauce onions in olive oil, chop Swiss chard in food processor and sauce with onions.
