Broccoli Quiche

Servings:6
1 unbaked pie shell (Marilyn pre bakes hers for 5 minutes)
2 tablespoons of butter
1 onion, finely chopped
2 cloves garlic, crushed
2 cups fresh broccoli, chopped
1 1/2 cups grated cheese
4 eggs well beaten, 5 If they are small
1/2 cup skim evaporated milk or 3/4 cup can be used if preferred
1/4 cup half and half
salt and pepper


Directions:
1.  Bring all ingredients to room temperature
2.  Preheat oven to 350°
3.  Over medium heat melt butter in large saucepan
4.  Add onion, garlic, and broccoli
5.  Cook slowly, stirring occasionally until the veggies are soft                     
6.  Spoon hot vegetable into pie shell and sprinkle with cheese7. 
7.  Combine eggs, milk and half and half
8.  Season with salt and pepper
9.  Pour egg mixture over vegetables and cheese
10. Bake in oven 35 to 40 minutes or until center comes out clean
